Blend yogurt, mango, 1/4 cup milk, honey and kale microgreens until smooth. Add remaining milk to achieve desired consistency.
1 cup yogurt, 1/2 cup milk, 1 tablepoon honey, 1/4 cup kale microgreens, 1 cup mango
If desired, add a pinch of cardamom powder and blend to combine. If using fresh mango, serve over ice. Top with pinch of cardamom and crushed pistachio nuts.
This healthy mango lassi will keep a few days in the refrigerator but is best consumed shortly after blending. You can substitute any mild tasting microgreen for the kale. Steer clear of micro mustard and radish. Try mild microgreens, like amaranth, kohlrabi, cabbage, or even lettuce.
