Have you ever tried juicing your microgreens? I love my juicer; it is a Champion Juicer that must be at least 30 years old. It creates wonderful fresh juices, gobbling up every kind of veggie and fruit imaginable and churning out velvety antioxidant-rich juices. BUT juicing microgreens does not work. Microgreens are so tender and small; they get lost in the juicer and feels like a total waste.

I like to make Blender Juices—not the heavy frozen smoothie, but a thick-ish juice. Blender juices give you the best of both worlds, the easiness of drinking a juice with benefit of the fiber you’d get from a smoothie. You can drink them without feeling full or heavy. Almost any microgreen variety can be made into a blender juice. Use any mild flavor in a typical sweetish green juice, or use a spicy variety with tomatoes for a V8-style juice.

I like this juice first thing in the morning. It isn’t too sweet or to vegetal. It is just the right amount of thickness. With the cucumber and lime, it is refreshing.

It also comes together in a few minutes— much quicker than making a traditional juice. The microgreens are so tender they liquidify in the drink.

Microgreens Green Juice Recipe

Time: 5 minutes active
Makes 1 large glass

Ingredients

  • 1 apple, cored and roughly chopped ~ roughly 1 cup

  • 1 small lime, juiced

  • 1/3 to 1/2 of a Round Living Wellness Medley Microgreens Tray- substitute micro broccoli, kale, or any other mild variety. Buy one at one of our weekly farmer’s markets, from our online store, (LA and OC from marketboxsd.com). Or you can grow your own with one of our kits!)

  • 1 cup roughly chopped cucumber ~ roughly 1 cup

  • ½ water or ½ cup green tea

  • Ice

  • Sweetener, optional, try honey

Directions:
Place all ingredients in a blender. Blend on high-speed until smooth. Add more water, as needed to reach a desired consistency. Serve over ice. Tip: Best consumed soon after blending.

I love my cold-pressed juices, but if you want to reap all the benefits of microgreens, blending them is the way to go. I think you’ll love experimenting with green blender juices! I’d love to hear what you think!
