Our Coco-Rosehips Cortisol Mocktail is a drink so sophisticated, so layered with flavor, it’ll make you question why you ever needed alcohol in the first place.

This cortisol mocktail was born out of a series of happy accidents and determination. Initially, I set out to create a warm mocktail. Something cozy, something that would make you want to cancel all your plans and stay in with a good book. But here’s the thing about coconut milk – it has a tendency to curdle when heated, turning what should be a smooth, creamy dream into something that looks like it belongs in a petri dish rather than a mug.

Not to be deterred, I switched gears at the suggestion of my sister. She really is so good in the kitchen. If I couldn’t have warm, I’d go for bold. I wanted flavors that could stand up to their boozy counterparts, flavors that would make you forget you’re drinking something sans alcohol. The solution? Time. Glorious, flavor-building time.

Step 1: The Overnight Steep

Here’s where things get interesting. This mocktail isn’t just mixed – it’s infused. It’s left to its own devices overnight in the fridge, letting all those complex flavors mingle and get to know each other intimately. You’ll do all of the prep the day (at least one day) before you plan to make the mocktail.

The result is a drink that’s greater than the sum of its parts. It’s tart, it’s sweet, it’s spicy, it’s creamy. It’s got layers, people. And I’m not just talking about the Instagram-worthy ombre pink in the glass (although, that’s a pretty nice bonus).

Coco-Rosehips Cortisol Mocktail Ingredients

Let’s break down the ingredients and their potential roles in helping manage cortisol, that pesky stress hormone we’re all trying to keep in check:

  • Pomegranate Juice:
    • Rich in antioxidants, particularly punicalagins and anthocyanins. These compounds reduce inflammation and oxidative stress in the body. Studies have shown pomegranate juice lowers cortisol levels and blood pressure, making it a great base for our stress-busting mocktail.
  • Rosehip Tea:
    • Packed with vitamin C, which plays a crucial role in regulating cortisol production. The polyphenols in rosehips reduce inflammation and oxidative stress. Regular consumption of rosehip tea is associated with improved mood and reduced fatigue, both key factors in managing stress. You can use loose Rosehips or Rosehips teabags for this recipe.
  • Cinnamon Sticks:
    • This spice is a powerful anti-inflammatory agent. It helps regulate blood sugar levels, which directly impacts cortisol. The comforting aroma of cinnamon has been shown to reduce stress and promote relaxation, making it a double-duty ingredient in our mocktail.
  • Whole Peppercorns:
    • Contains piperine, a compound that improves mood and cognitive function. The anti-inflammatory properties of whole peppercorns help counteract stress-induced inflammation in the body. As a bonus, piperine enhances the absorption of other beneficial compounds in the drink.
  • Crushed Cardamom:
    • Used in traditional medicine for stress relief, cardamom contains compounds with anti-anxiety effects. Its pleasant aroma reduces stress and promotes a sense of calm, making it an excellent addition to our cortisol-managing concoction.
  • Coconut Milk:
    • Contains medium-chain triglycerides (MCTs) that provide quick, sustainable energy. It’s rich in magnesium, a mineral that plays a key role in regulating cortisol levels. The creamy texture of coconut milk is satisfying and can help reduce stress-induced cravings.
  • Mint (for garnish):
    • The scent of mint reduces stress and improves alertness. It contains rosmarinic acid, which has anti-anxiety properties. Mint also aids in digestion, helping to reduce physical stress on the body.
  • Ginger:
    • Ginger works wonders for reducing cortisol because it helps regulate inflammation in the body, which is often linked to higher stress levels. It also supports healthy blood sugar levels and improves digestion—both key factors in managing cortisol spikes.
  • Seltzer (Sparkling) Water:
    • Sipping on seltzer water can indirectly help lower cortisol by keeping you hydrated, which is crucial for stress management. Dehydration can spike cortisol levels, so staying refreshed with bubbly water can help keep things in check.

Servings 4

Ingredients

  • 4 cups Pomegranate Juice not from concentrate
  • 2 cups Coconut Milk
  • 2 cups Seltzer
  • 10 Rosehips Teabags or equivalent loose Rosehips tea
  • 10 Whole Peppercorns
  • 5 Crushed Cardamom Pods
  • 4 Cinnamon Sticks
  • Mint Sprigs (for garnish)
  • Cinnamon Powder (for garnish)
  • 1 Small Knob Ginger cut into 3-4 medallions

Instructions

Part 1

  • Add the pomegranate juice, 8 of the rosehips tea bags, cinnamon sticks, whole black peppercorns, crushed cardamom pods, and ginger medallions into your first jar.
  • Close it tight and give it a shake before putting it in the refrigerator to infuse overnight.
  • Add the coconut milk and the two remaining Rosehips teabags to the second jar. Close the jar, shake it, and put it in the fridge. (Note: the coconut milk will separate and thats ok)

Part 2

  • After a night infusing (although 24 hours steep time is ideal) the pomegranate mixture will be a deep, jewel-toned red. The coconut milk will have separated, but don't panic – that's supposed to happen. Give both jars a good, vigorous shake.
  • Fill a glass halfway with ice. Use a small to medium sized strainer to pour the pomegranate mixture halfway up each glass. Make sure none of the spices, ginger, or tea bags get in the glass.
  • Add a splash of seltzer – about a quarter of the glass.
  • Remove the teabags and pour the pink coconut milk mixture slowly over the top in a circular motion as it creates a beautiful ombré effect.
  • Garnish with a sprinkle of ground cinnamon, a sprig of mint (slap it between your palms first to release the oils), and a swizzle stick.

Notes

If you happen to wander into the kitchen for a midnight snack, give your jars another shake.

The Experience

This isn’t just a drink – it’s an experience. It’s a conversation starter. It’s a way to feel like you’re indulging without the hangover. It’s a small act of self-care in a world that often feels like it’s spinning too fast.

The tartness of the pomegranate hits you first, a wake-up call to your taste buds. Then comes the warmth of the spices – the cinnamon, the cardamom, the subtle heat of the black pepper. The rosehips tea adds a floral note, like a whisper of summer in the midst of fall. And finally, the coconut milk smooths everything out, a creamy finish that leaves you feeling satisfied but not stuffed.
