Mango Lassi is a creamy, yogurt-based Indian drink that’s perfect for balancing hot or spicy food, or any time you crave a tropical flavor. It’s also incredible as a snack or by itself for breakfast. It’s a type of “smoothie” that is fantastic with Kale Microgreens. This delicious cold and creamy Kale Microgreens Mango Lassi is made with ripe mangoes (or frozen mangoes), yogurt, Kale Microgreens, and a touch of honey and spice.

What’s a Mango Lassi?

A mango lassi is a beverage consisting of pureed mangos and yogurt that originates from India. Depending on the region, mango lassi may have a splash of rose water or a sprinkle of cardamom. Some mango lassi drinks are loose and frothy with ice blended in, and others are more like smoothies. Milk is added to make the drink thinner or thicker.

Mangos are native to Southeast Asia, and it is likely the mango lassi drink has been enjoyed for centuries!

Is Kale Microgreens Mango Lassi Healthy?

At its core, Mango lassi can be considered a healthy drink. It’s a good source of vitamins, minerals, and antioxidants, thanks to the mangoes and yogurt. Adding micro kale provides another source of antioxidants, phytonutrients, glucosinolates, and micronutrients.

  • Mangoes are rich in vitamins A, C, and E, as well as potassium and fiber.
  • Yogurt contains protein, calcium, and probiotics that can benefit gut health.

Be mindful, though, mango lassi can become less healthy if you dump excess sugars and funky processed ingredients, and too much fat.

Micro Kale Mango Lassi Instructions

Blend 1 cup of mango puree (or fresh or frozen mango chunks), 1 cup of yogurt, 1/2 tray living kale microgreens (learn how to grow your own kale) or a handful of harvested kale microgreens, a tablespoon of honey (adjust to your own taste), and 1/2 cup of milk. Blend until smooth, adding additional milk to reach a consistency you enjoy. Top with a good pinch of crushed cardamom and sprinkle a bit of crushed pistachio for garnish.

Enjoy fresh as is, or pour over ice. Best if consumed straight away, but will last a few days in the fridge. Stir before drinking if any separation occurs.

Equipment

  • 1 Blender
  • 1 measuring cup
  • 1 measuring spoon

Ingredients
  

  • 1 cup yogurt sub plant-based yogurt if desired
  • 1 cup mango Use fresh or frozen mango
  • 1/2 cup milk sub plant-based milk if desired
  • 1 tablepoon honey optional
  • 1/4 cup kale microgreens sub any mild microgreen
  • 1 pinch cardamom powder optional, add more to taste
  • 1 pistachio, gently crushed optional

Instructions
 

  • Blend yogurt, mango, 1/4 cup milk, honey and kale microgreens until smooth. Add remaining milk to achieve desired consistency.

  • If desired, add a pinch of cardamom powder and blend to combine. If using fresh mango, serve over ice. Top with pinch of cardamom and crushed pistachio nuts.

Notes

This healthy mango lassi will keep a few days in the refrigerator but is best consumed shortly after blending. 
You can substitute any mild tasting microgreen for the kale. Steer clear of micro mustard and radish. Try mild microgreens, like amaranth, kohlrabi, cabbage, or even lettuce.
